Job Title: Sous Chef – Knightsbrook Hotel, Trim, Co. Meath

About the Role:

We are looking for an ambitious and skilled Sous Chef to join our busy kitchen brigade. Reporting to the Senior Sous Chef and Head Chef, you will be the key operational driver on the line, responsible for executing service to the highest standard, running specific sections, and mentoring the junior team. This role is ideal for a high-performing Chef de Partie or an existing Sous Chef seeking structured career growth in a renowned Meath resort.

Key Responsibilities:

  • Service Execution: Lead designated kitchen sections (e.g., Sauce, Pastry, Larder) during peak service hours, ensuring speed and consistency.
  • Delegation & Training: Effectively delegate tasks to the Chef de Parties and Commis Chefs, providing hands-on training and mentorship.
  • Preparation & Stock: Oversee daily mise-en-place, ensuring all preparation lists are completed accurately and efficiently. Assist with checking and storing incoming stock.
  • Quality Control: Act as a critical control point, verifying the taste, temperature, and presentation of dishes before they leave the pass.
  • Hygiene & Safety: Ensure your sections and equipment are meticulously maintained, adhering to all kitchen cleanliness and health and safety standards.

Candidate Requirements:

  • Minimum of 2-3 years’ experience in a busy, professional kitchen, with at least 1 year at a Chef de Partie or Sous Chef level.
  • Technical proficiency across all main culinary techniques and a strong understanding of food production flow.
  • A positive, high-energy attitude and the resilience to perform exceptionally well under high pressure.
  • Excellent communication skills—must be able to give clear, concise instructions to the team.
  • Commitment to a clean and organised working environment.

What We Offer:

  • Competitive hourly rate: €22.00 per hour (Equivalent to approx. €44,616 per annum).
  • Guaranteed full-time contract: 39 hours per week.
